this page is interesting..

it explains the main salsa instruments and has clips which one can listen to, of that instrument. finally at the end of the page you can combine more than one instrument and listen to the composition. and change the tempo as well!

If you enjoyed the site that Anand listed, you may also want to check out something called the Salsamerlizer. You can find it at http://www.oldyorksalsa.com/apps/salsamerlizer/. It allows you to listen to the various instruments in salsa by themselves as well as together. It is very helpful to hear how the instruments interact with each other, particularly the clave.
